Roasted Za’atar Tahini Cauliflower
I love the versatility of cauliflower, but to be honest, sometimes I get so tired of it…Or maybe bored is a better word. This is a perfect recipe to spice up your flavors. Za’atar is a middle easter spice blend, and it pairs so well with the creamy tahini. It’s got creamy complexity, but it also just tastes fresh and light!

Creamy tahini with a blend of middle eastern spices and flavors. This is such a simple recipe, but such a great way to add some excitement to your cauliflower!

- 1 head of cauliflower
- 1/2 tsp salt (to season cauliflower)
- 1/2 tsp pepper (or to taste)
- 2 T avocado Oil (to roast cauliflower)
Tahini Sauce Ingredients
- 2 T tahini
- 3 T cold water
- 2 T of Extra Virgin Olive Oil
- 2 Cloves of Garlic (mined)
- 1 T Za'atar spice blend
- 1/4 tsp salt
- Juice from 1/4-1/2 lemon (use more lemon if you like it more tart)
- Pepper to taste
- 1 T Fresh Mint (optional)

- Preheat your oven to 425 F. While preheating toss your cauliflower florets with avocado oil, salt and pepper. Lay evenly on a parchment lined baking sheet. Bake for about 10 minutes. Check the florets and flip them and stir them around, if are browning. Put back in the oven and cook for another 5-8 minutes, or until golden roasted. Remove from the oven and let cool for 3-4 minutes.
- While the cauliflower is roasting whisk together your sauce ingredients. If you are finding the tahini mixture is quite thick, add a bit of cold water, 1 Tablespoon at a time. (You want it to be slightly thick and creamy so it sticks to the cauliflower. Set aside.
- In a mixing bowl, toss your roasted cauliflower with the tahini mixture. Add fresh mint and garnish with fresh mint and parsley (if desired). Enjoy!
