This is such a satisfying snack on it's own, or you can serve it as a side dish with breakfast, lunch or dinner!

- 1 Avocado (diced and not overly ripe)
- 1 Medium Cucumber (diced)
- 1/4 cup chopped parsley
- 2 T Avocado Oil
- 1 T Hemp Seeds
- Juice of 1/2 lemon
- Pinch of Flaky Sea Salt and Pepper
- Pinch of Crushed Red Pepper flakes (optional)

- Mix all of your ingredients in a small mixing bowl. Adjust seasonings to your preference. Store in the fridge to serve chilled, or enjoy right away!
Notes
For the Avocado, this works best if you use an avocado that is not quite ripe yet (a little bit harder) as it will keep it's shape better.
