Crispy Yucca Fries
Yucca fries— yum!! If you see yucca in the store, you probably are thinking “what in the world is that?!” I’ve had similar thoughts… It’s a very intimidating looking root. But, once you cook with it once, you’ll see it’s really not that hard to work with, and it’s so delicious!
If you’re new to yucca/cassava, it’s a starchy vegetable that has recently become more popularized as a grain free alternative. I love using them to make yucca fries, they get golden and crisp, and I find they have a slight nutty flavor that is crave-able.
To prep these, I highly recommend watching a youtube video on how to peel them, I linked one in the notes. It’s about 2 minutes and it really simplifies how to work with yucca. So check it out! All you need is a few ingredients, and then you can enjoy these crispy fries for yourself :)
Crispy Yucca Fries
Ingredients
- 2 Large Yucca Roots
- 2 T Avocado Oil
- 1 tsp sea salt
- 1 tsp paprika
- pepper to taste
- 1 tsp dried parsley (optional: for garnishing)
Instructions
- Preheat oven to 425 F. Next bring a medium pot of water to a boil. While you are waiting for your water to boil prep your yucca root, peeling the skin off and slicing into long spears, like a french fry. (Check out notes on how to peel the yucca).
- Once your water is boiling, and your yucca is cut, place your yucca fries into the boiling water, and reduce the water down to a simmer. Simmer for ~5-10 minutes (this will vary on how thick you cut your slices) or until your cassava fries are slightly tender. (you don't want them mushy, but also not so hard- a fork should be able to go through, but not break the slices).
- Strain the yucca fries into a colander. Let Sit for a couple minutes drying, and removing the excess water. Transfer the yucca into a mixing bowl, and toss with the seasonings (avocado oil, salt, paprika and pepper). Cook in the oven for about 15 minutes, then flip/mix around. Cook for another 15-20 minutes or until golden brown and crispy. Remove from the oven. Top with fresh parsley and finishing salt if desired.
