Toasted Coconut Truffles

These dark chocolate covered toasted coconut truffles are simple, and abundant with healthy fats from coconut, minerals from date and polyphenols from the dark chocolate. Toasted Coconut Dark Chocolate Truffles

These minimalist toasted coconut truffles are simple, yet delicious! Toasted coconut sweetened with date, covered in smooth dark chocolate.

Ingredients

Ingredients
  • 1.5 cups Toasted Coconut
  • 12 soaked Dates (soak in hot water for 10 mins)
  • 1/2 cup Coconut cream
  • 1 T Vanilla
  • 1/4 tsp Sea salt
  • 1/2 cup of Dark chocolate to coat
  • 1 T Coconut Oil (to melt chocolate)
  • Optional: Coconut or flaky sea salt to top

Instructions

Instructions
  1. In a blender or food processor mix the ingredients (except the chocolate and Coconut oil) together.
  2. Roll into balls and place in the fridge to help set. While in the fridge, melt the dark chocolate.
  3. Coat the coconut balls with dark chocolate and top with sea salt or coconut flakes.
  4. Place back in the fridge, and once the chocolate has hardened, enjoy :)

Notes

To toast coconut flakes- take unsweetened flakes and over low/medium heat, toast coconut flakes in a saute pan until golden and fragrant. Careful not to burn them.
