Pineapple Coolada Cream

Pineapple is the star of the show in this recipe. If you have ever been to Disney World, and gotten one of the Pineapple Dole Whip frozen treats, this tastes just like those. But even better, because it’s got all quality ingredients, with no added sugars :)

Pineapple is such a wonderful fruit to use in smoothies. First off, it taste’s amazing and refreshing, and it also contains a proteolytic enzyme called bromelain. Bromelain helps to more effectively break down proteins, but it also has many other beneficial uses such as reducing pain, sinus inflammation, and reducing soreness.

There are two ways that you can enjoy this smoothie. You can blend it and drink it right after, or you can transfer it to glasses and put them in the freezer for 15-20 minutes, and enjoy as an “ice cream.”(or as long as you want, but then you will have to let it thaw before eating) Both ways are delicious! I like to freeze it, because it helps me eat slower, sometimes when it’s just too good, I eat it too fast!

This is the perfect recipe for spring or summer to help cool you down. Its refreshingly tangy, sweet and creamy.

Ingredients

  • 1 pack of frozen coconut ( I use Pitaya foods coconut packs)
  • 1 cup frozen pineapple
  • 1/2 cup coconut milk (I used canned)
  • 1/4 cup coconut yogurt
  • 1 scoop vanilla protein powder
  • handful of ice (optional)

Instructions

Instructions
  1. Place all ingredients in a blender, and blend on high. Mixing as you go, until you have a smooth consistency.
  2. Pour into glasses, and enjoy!

Notes

You can drink this as a smoothie, or I like to put mine in the freezer for 15-20 minutes, to let it harden and it's like a creamy pineapple ice cream.
