Carrot Cake Protein Bites
Spring is right around the corner, so I’ve been obsessed with making carrot cake everything. I did a carrot cake shake, carrot cake balls, and I still have so many more I want to do!
These carrot cake bites are perfectly spiced to fill that carrot cake craving, and they are also a great snack option. They have no refined sugars, all of the sweetness comes from the dates and carrots. These protein bites are a perfect snack for before or after a workout to help replenish glycogen stores, or give you a little boost of energy if you have a long workout or training ahead.
Carrot Cake Protein Bites

These are a super simple, refined sugar free protein bite, great for after a workout, or when you want a sweet treat. They pair so well with a latte or a warm cup of tea.
Ingredients
Ingredients
- 1 cup shredded coconut flakes (unsweetened)
- 2 cups shredded carrots (2 large carrots shredded)
- 1/2 cup gluten free oats
- 1/2 cup chopped pecans
- 1/4 cup almond butter
- 1/4 cup protein powder
- 6 dates (soaked in hot water for 10 minutes)
- 2 T Coconut milk (or other milk alternative)
- 1 T vanilla extract
- 1 T Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Ground Ginger
- 1/2 tsp flaky sea salt
For Coating (optional)
- 1/4 cup shredded coconut (unsweetened)
- 3 T of Melted coconut butter
Instructions
- Place all the ingredients in a blender, and blend till well mixed. You should have a nice doughy texture.
- Take the dough and roll into balls. Separate about 1/4 cup coconut shreds into a small bowl and roll each ball to coat thoroughly with coconut shreds. (optional) or drizzle melted coconut butter. If you want to use both toppings, coat with coconut shreds then drizzle melted coconut butter on top.
- Put in the fridge or freezer to let harden. Enjoy!
Notes
If you don't have pecans, you could also substitute walnuts as a good substitute.
