Carrot Cake Shake
Spring is around the corner, so cue all the carrot cake inspired recipes! I love the carrot cake flavor, topped with cream cheese frosting, it’s so decadent and satisfying. While I didn’t add any cream cheese frosting I love to top it with melted coconut butter to top, it’s like one of those “magic shell” ice cream toppers that adds a little somethin-somethin :)

The perfect spring smoothie when you want to indulge in something carrot cake inspired!
Ingredients

- 1 pack of frozen coconut ( I use Pitaya foods coconut packs)
- 1 frozen banana
- 1/2 cup coconut milk (I used canned)
- 1/2 cup shredded carrot
- 1 T of almond butter or pecan butter
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- 1 scoop vanilla protein powder
- handful of ice (optional)

- Place all ingredients in a blender, and blend on high. Mixing as you go, until you have a smooth consistency.
- Pour into glasses, and enjoy!
Notes
If you want to put a little garnish on top, I melted coconut butter and added some crushed pecans, to add some nice texture!
