Herbed Sweet Potato Mash

This is the easiest sweet potato mash recipe, with garlic and herbs for that extra umph of flavor. I love a good mashed potato, and I wanted to make a recipe that was a bit lighter, dairy free, and still yummy.

These are a great option when you are in a rush to get dinner on the table and need a no-fuss recipe, that you can stick on the stove with little attention. It’s also an easy recipe for holiday dinners as an easy side for a big group of guests.

This is a super easy side dish to whip up to serve with dinner or lunch. All you need is a few ingredients!

Ingredients

  • 2 medium sweet potatoes (rough chop/ quartered)
  • 2 cloves garlic
  • 2 T Extra Virgin Olive Oil
  • 1/4 cup coconut cream (add more if you like thinner)
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • pepper to taste

  1. Bring a medium pot of water to boil. Add your rough cut sweet potatoes. Bring down to a low boil, and cook for 15-20 minutes, or until tender.
  2. Once the sweet potato is tender (fork can easily go through it) strain the water out of the pot. Use a fork or potato masher, and roughly mash the sweet potatoes. Add the remainder of the ingredients to the pot and continue mashing the ingredients together. Taste and adjust salt and pepper to your liking.
  3. Serve with a lean protein and non-starch vegetable for a balanced meal!

Notes

If you are not dairy free, you could use butter in place of the Olive oil for a buttery finish.


If you have a hand mixer, you can use this to mix the ingredients and whip the mashed sweet potato.
