Crispy Yucca Fries
Yucca fries— yum!! If you see yucca in the store, you probably are thinking “what in the world is that?!” I’ve had similar thoughts… It’s a very intimidating looking root. But, once you cook with it once, you’ll see it’s really not that hard to work with, and it’s so delicious!
If you’re new to yucca/cassava, it’s a starchy vegetable that has recently become more popularized as a grain free alternative. I love using them to make yucca fries, they get golden and crisp, and I find they have a slight nutty flavor that is crave-able.
