Garlic and Herb Bison Burgers
Sometimes red meat can get a bad rep, but in reality red meat’s can be extremely nourishing. They are an excellent source of B vitamins, Vitamin A, Vitamin D, zinc, selenium, iron protein and more. Meat can be a nourishing anti-inflammatory food if you eat a high quality source.
The quality of the meat that we eat, comes from the quality of the animal’s diet. Conventionally raised meats, come from animals that are fed corn and grain fed diets. When animals are fed corn and grains, this helps to speed up the growth of the animal so that its time from birth to slaughter is faster, so more meat can be produced at a large industrial scale. Furthermore, they are pumped with anti-biotics and growth hormones to help them increase in size and also to keep them “healthy” in the overcrowed feed lots that they live in. In essence, corn and grains help animals to become fatter, quicker along with hormones and anti-biotics. Leaving a fattier, and anti-biotic filled, highly inflammatory cut of meat for those of us who eat this meat. In comparison, a pasture raised meat has a higher omega 3 fatty acid profile (more anti-inflammatory), antioxidants, and free from antibiotics and added hormones. So long story short, pasture raised meats and animal byproducts are a better choice!
Garlic and Herb Bison Burgers
Ingredients
- 1 lb of pasture raised ground bison (or could use other ground meat)
- 1 egg
- 1 small yellow onion (sauteed till soft)
- 1/2 cup chopped parsley
- 2 cloves garlic
- 1/2 tsp fennel seeds
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- On the stove top, sautee diced onion on medium-low heat, till they are soft and become translucent. Remove from heat.
- In a mixing bowl combine all of the ingredients till evenly mixed.
- Use hands to form 1/4" patties (or your desired size) and place the formed patties on a parchment lined baking sheet. Once you have formed all of the patties, place them in the fridge for 30 minutes to an hour to help them set.
- Remove from the fridge and either cook on the stove top over medium heat, or on a grill. Cooking for 3-5 minutes each side. If you are adding cheese, once you have flipped the burgers, put a slice of cheese on top, and either put a lid on, or close the grill to help it melt.
- Remove from heat once cooked to your liking (I like medium rare) and serve in a bun of your choosing, or like me, in a large lettuce leaf! Top with your favorites and enjoy!
