Plantain Crusted Buffalo Cauliflower Bites

Crispy, golden, buffalo bites! These are always a hit with my family when I make them. They are such a great appetizer or snack, that are easy to make and so delicious!

I used crushed up plantain chips to coat the cauliflower, but you could use different grain free chips too! I’ve used Siete chips, Sana chips, but there are lots of different brands that have coconut based chips or even cassava chips.

The perfect appetizer or snack! Plantain crusted buffalo cauliflower bites are made with minimal ingredients and baked to a perfect crispy golden crunch.

  • 1 head of Cauliflower (chopped into florets)
  • 3 eggs (beaten)
  • 1 cup crushed plantain chips (I use Terra Chips that are cooked in coconut oil)
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 cup buffalo sauce (I used Noble Made Medium)
  • 1 T Avocado Oil (to mix with buffalo sauce)
  • 1 T avocado oil Or Spray Avocado Oil (to coat the cauliflower before baking)

  1. Preheat your oven to 425F. While the oven is preheatign, toss your cauliflower florets into your beaten eggs. Making sure to fully coat the cauliflower with the egg, this will help the plantain to stick.
  2. In a blender or food processor, pulse your plantain chips, paprika and salt together. Pulse till you have a textured mix (you don't want to pulse till it's too fine, or you won't get that nice crispness). Take your egg-coated cauliflower florets and coat them in the plantain chip mixture. Thoroughly dredge so the cauliflower has a nice crisp coating.
  3. Lay the coated cauliflower on a parchment lined baking sheet. Once you have coated all the cauliflower either drizzle the cauliflower with Avocado oil, or use a spray avocado oil to spritz the cauliflower. Bake in the oven for about 20 minutes to
  4. Mix your buffalo sauce with 1 T of Avocado Oil. Remove the cauliflower from the oven once they are crispy and golden and pour the buffalo sauce mixture over the crispy cauliflower. Put back in the oven for an additional 5 minutes to bake in the flavor. Remove from the oven. Enjoy! (Pair with a homemade greek yogurt ranch, or Kite Hill Dairy free ranch dip is also a great option!)

Notes:

In place of plantain chips, you could also use a grain free tortilla chip like Siete brands or Sana.
