Paleo Thin Mint Cookies

Thin Mints, arguably the best Girl Scout cookie made. (I have to say Samoas are a top contender though!) These dark chocolatey peppermint cookies will bring you back to the original thin mint. The great thing about these, are they are simple, easy to make, and also minimal ingredients!

***One of my personal favorite ways to enjoy to store them in the freezer and enjoy frozen! (I do this with thin mints too! It’s so good!)

These are a paleo version of a childhood staple, thin mint girl scout cookies. Minty, chocolately and crispy!

Ingredients

The Dough
  • 2 cups almond flour
  • 1/4 cup cocoa powder
  • 1/3 cup Melted grass fed butter or ghee
  • 1/4 cup Maple syrup
  • 1 tsp peppermint extract
Coating
  • 1 cup dark chocolate chips (I use Eating Evolved Dark Chocolate)
  • 1 T grass fed butter
  • 1/2 tsp peppermint extract

  1. Preheat oven to 350 degrees F. While preheating, mix together all of the dough ingredients in a medium mixing bowl.
  2. Form into a large ball, and then on parchment paper, roll out into a log shape. Wrap the log shaped dough in parchment paper and place in the fridge/freezer for 20-30 minutes or until firm (but not frozen).
  3. Take the cookie dough log out of the fridge/freezer. Slice into 1/4 inch cookies. Spread out on parchment lined cookie sheet.
  4. Bake for 14-18 minutes. Keep a close eye on them to ensure they don't burn. They may still feel slightly soft, but they will firm up once you let them cool.
  5. While they are cooking, melt the chocolate chips, butter and peppermint extract on low heat in a medium saucepan. Continually stir, so the chocolate doesn't burn. Once melted, turn the stove top off.
  6. Coat the cookies thoroughly, and pop them into the freezer to harden the chocolate.
  7. Enjoy!

Notes:

You can store these in the fridge or the freezer. They will keep for a week in the fridge, and over a month in the freezer.

These are delicious as is, or even better as a topping for a mint chip smoothie!
