Healthy Dark Chocolate Brownie Bombs

We had family visiting this week, and so I offered these to everyone. I hadn’t shared them before, and they were a huge hit! I ended up making them 3x this week, because after every meal we always wanted a chocolate ball.

They are sooo easy to make, and a great treat that is refined sugar free, and made with wholesome and satiating ingredients.

A few things to note when making this recipe:

You really want to get the perfect texture for the ball, that’s what makes them so good and brownie-like. I found that with the protein powder I was using, that it wasn’t sticky when I rolled it, it was able to form a ball easily, and it felt a bit oily. After rolling out the balls, I like to put it in the freezer before dipping it in chocolate, this helps maintain a great ball-shape. Lastly, for the sugar, I used monk fruit, but you could also use coconut sugar, or another granulated sugar.

Ingredients

Ingredients
  • 1/2 cup Almond Flour
  • 1/2 cup Almond butter (natural drippy kind)
  • 3 T Cacao Flour
  • 1/2 tsp sea salt
  • 1 tsp vanilla
  • 1/4 cup Vanilla Protein Powder
  • 3 T Granulated Monk Fruit
  • 1 T Avocado Oil
Coating
  • 1/2 cup Extra Dark Chocolate Chips (I used eating evolved)
  • 1 T coconut oil

Instructions

Instructions
  1. In a medium mixing bowl, combine all the ingredients (except the coating ingredients). Thoroughly mix until you have a "dough." Roll the dough into evenly sized balls (~1 Tablespoon) Place on a parchment lined baking sheet. Once you have rolled out all the balls, place the sheet of them in the freezer for about 15-30 minutes, or until they are semi hard, and retain their shape.
  2. While the balls are in the freezer, melt your chocolate coating. Take balls out of the freezer and evenly coat the balls, by dropping them into the chocolate and swirling, till they are completely coated. Place back on the parchement sheet, and store in either the fridge. (If you store in the freezer, you may need to let thaw for a couple minutes before eating.)
  3. Enjoy!

Notes

I used Eating Evolved Extra Dark Chocolate Chips to keep it low in Sugar, but you can use any type of chocolate that you prefer.
