Mint Choco Chip Smoothie
There’s this cute little smoothie shop in Boulder, CO called Wonder, this is where I had my first ever mint chip smoothie. My second mint chip smoothie was in LA, at Erewhon. I was in LA for a week, and I literally got it every day. (even though it was $20) Needless to say, I became obsessed. That’s when my mission of replicating these mint chip smoothies began. And I think I’ve finally done it! A copycat Erewhon Mint Chip Smoothie!
There are definitely a few ways that you can ad-lib this smoothie. Sometimes when I run out of frozen coconut packets, I just use a whole banana. Sometimes if I don’t have collagen creamer, I’ll use a protein powder that I have on hand. You can also play around with the thickness of the smoothie. If I’m really thirsty, I like it more like a smoothie (add more coconut milk), but if I want it more of a dessert I like it thicker, like ice cream (less coconut milk, and also using protein powder in place of collagen creamer helps it become thicker). I also always use frozen ingredients, because they help it to be a thicker consistency
Creamy Mint Chip Smoothie
Ingredients
- 1 Heaping Handful of Spinach
- 1/2 frozen banana (use a full banana if you don't have coconut)
- 1/4 cup of coconut chunks (I use 1/2 of a frozen coconut pack)
- 1/2 cup unsweetened coconut milk
- 1/4 tsp peppermint extract
- 1 T Unsweetened Cacao nibs
- 1 Scoop vital proteins collagen creameror vanilla protein powder
- 6 drops Chocolate Stevia (optional)
Instructions
- Put all the ingredients in a high power blender, and blend! I like to top with my paleo copycat thin mint cookies for a real treat!
Notes:
To change the thickness of the smoothie, you can adjust the amount of coconut milk (or other milk alternative). More milk for a thinner smoothie, less milk for a thicker "bowl" consistency.
If you don't have Chocolate stevia, you can use another natural sweetener like a date. Alternatively you could use a full banana in place of coconut chunks.
Just blend the ingredients, and enjoy!
