Maple Pecan Shaved Brussel Salad

It’ s light, fresh and just a touch sweet! You can make it even faster if you buy pre-shaved brussel sprouts and batch make the dressing.

- 1 lb of brussel sprouts (shaved or chopped finely, you could also use a bag of pre-shaved brussels to make it faster)
- 1/4 cup pomegranate seeds
- 1/4 cup chopped pecans
- 2 T Manchego cheese (sheeps milk) shredded
- Shredded chicken (optional for topping)
Dressing
- 1/4 cup of Extra Virgin Olive OIl
- 2 tsp Pure Maple syrup
- 1 T Dijon Mustard
- Juice from 1/2 lemon
- Salt and Pepper to taste

- In a bowl whisk all of your dressing ingredients together, until evenly and thoroughly mixed.
- In a mixing bowl toss all of the ingredients for the salad together. Finish topping with shredded chicken or other source of protein (if desired). Transfer to a serving bowl, enjoy!
