3 Ingredient Flourless Waffles

About Recipe:

These are a minimalists’ dream. These waffles only have 3 ingredients and are completely flourless. They are so easy, and also versatile! You can make them either sweet or savory. The main ingredient is plantains, which are fabulous for pancakes and waffles because they already are a starchy fruit, so this gives them their fluffiness without any flour.

Tips and Tricks:

Meal Prep: These are a great waffle to meal prep. You can make them in a big batch and then freeze them as you would a frozen waffle. When you’re ready to eat them, just pop them in the toaster and top with your favorites. It’s easy, wholesome and nourishing.

Sweet: I love to eat plantains sweet! When they are yellow/turning blackish this is when they are most ripe and most sweet. You can make them in this form, and a great addition to the recipe is throwing in a few dashes or cinnamon!

Savory: While I love a sweet plantains, the slightly sweet and salty version is my favorite! This is when you would be using slightly green/yellow plantains. These are firmer and have more starch. I like to add a pinch of flaky sea salt on top of these or grass fed salted butter. Then serve with eggs and avocado for a wholesome meal or snack!

There are so many ways to enjoy plantains. I love them sautéed with a little coconut oil and sprinkled with sea salt,  in waffle or pancake form, or as tostones!
