Gluten Free Lemon Coconut Pancakes

If you have ever been to Cafe Luna in Boston, you know that they have the BEST Lemon Ricotta pancakes! They are fluffy, moist and perfectly sweet. They are addicting!! I wanted to create a grain-free lemon pancake reminiscent of these Cafe Luna stacks. And these are πŸ‘Œ!!!

Tips and Tricks:

Pancake Flipping: Since these pancakes are made completely grain and gluten free, they are a more delicate pancake. I recommend making the pancakes on the smaller side so that they are able to be flipped easier. It is also easier if you let them cook for a bit longer on their first side before flipping and this will help them stay intact.

Sweetener: I like to use minimal sugar in my recipes and always use unrefined sugar options. That being said, another option that may work well for this recipe is maple syrup.

Coconut Yogurt: Coconut yogurt is a great way to add moisture and texture to this recipe. It helps create a light pancake, and makes these the perfect texture :)

Gluten Free Lemon Coconut Pancakes

This light and fluffy lemon pancakes are deliciously moist and addicting!

Ingredients

Ingredients:
  • 1/2 cup coconut yogurt
  • 1/4 cup coconut flour
  • 1/2 Lemon juice
  • Zest from 1 lemon
  • 2 T maple syrup or 1T honey
  • 1/4 tsp Baking soda
  • 3 eggs
  • 2T coconut oil
  • 2 T Coconut milk

Instructions
  1. Heat Griddle to low/medium heat with coconut oil. While preheating, mix the pancake ingredients until you. have a smooth consistency.
  2. Once preheated, pour the batter into 3-5 inch pancakes. Wait until bubbles form and then flip. (I sometimes will tilt the griddle so that I can get the pancake fully under the spatula and then flip)
  3. Once golden and browned, flip and let cook fully! Top with your favorites and enjoy!

Notes

These pair great with coconut whipped cream, coconut yogurt, fresh berries and maple!
